Since I found Caramel Chips in the supermarket I have made two batches of Caramel Chip Biscuits biscuits and have a third in mind for tomorrow.
If you have no Caramel Chips I think white or milk chocolate chips would be a happy substitute.
I used dark brown sugar for a really caramel biscuit and I used an ice cream scoop to dole out the mixture and half a scoop per biscuit.
The recipe says to cook them for 15 minutes, but I found I needed 20.
This is such an easy recipe, only two steps really and it makes 30 biscuits. They seem too soft when they come out of the oven, but after 5 minutes cooling on the tray and finally on a rack, they are crackled on top and slightly crunchy.
I can highly recommend them made with some added chopped pecans!!!
Caramel Chip Biscuits makes 30
- 125g butter, softened
- 3/4 cup brown sugar
- 1 egg
- 225g self raising flour
- 250g packet of Caramel Bits
Preheat the oven to 150*C and grease and line two trays.
Cream the butter, sugar and egg until pale and light. It took 5 minutes.
Combine the Caramel Bits and the flour and then fold into the biscuit mixture.
Roll level tablespoons of the mixture into balls and flatten slightly on the tray. Bake for 15 minutes (mine took 20), turning and swapping the trays half way through.
Rest on the tray for 5 minutes and then cool totally on a rack. These will keep well in an airtight container.

Yummy & my girls will love them. I will have to look out for the Caramel Chips when I am in the supermarket. In fact, I have all the rest of the ingredients in my pantry.
