Friday Food: Chocolate Crackle Easter Eggs

We made Chocolate Crackles at home when I was a little girl. They were a treat, in white paper patty pans, and only for special times. They tasted best straight from the fridge.

I made Chocolate Crackle Easter Eggs with MrsDrWho's class but I had a trial run at home first. I used Dutch Cocoa to make them a bit more upmarket!! Copha is frowned upon now, and you could make these with just some melted milk chocolate to bind the dry ingredients together. However, this is a traditional recipe, and as Cookie Monster says: It's a sometimes food. The children took home two each.

The children decorated them with white chocolate and 100s & 1000s (I like the spherical kind best, the long squibby ones are called Sprinkles here) I dipped the pointy end in some melted white chocolate and then piped on a little extra coloured pink and then lobbed on some candy butterflies.

I bought the fillable eggs, 6 and 4.5cm, at Spotlight for about $3 a packet. This recipe fills 12-15 of the 6cm eggs. I know not how many of the smaller, but lots I think.


Chocolate Crackle Easter Eggs   makes 12-15 6cm eggs

  • 125g Copha
  • 2 cups puffed rice
  • 1/2 cup pure icing sugar (sifted)
  • 1/2 cup desiccated coconut
  • 2 tbspn good cocoa
  • 1 tspn vanilla extract
  • extra bits and bobs for decoration


Before I started, I put the fillable plastic eggs in some boiling water for a few seconds, just to make sure they were clean.

Melt the copha in a pan over a very low heat. It is oil, and if it gets too hot it spits and will burn. I'd recommend the stove top over the microwave in this case.

Place the puffed rice, icing sugar, desiccated coconut, vanilla and cocoa in a large bowl and mix well to combine. Make a well in the centre and carefully pour in the melted copha.

Stir thoroughly to ensure that all the dry ingredients are 'wet' and that each rice puff is coated.

Fill each half of the egg: it must be neither too full, nor too empty. It takes a little patience, and I poked and prodded the rice puffs to close any gaps. The eggs click together. I used an egg carton to stop them rolling about everywhere. When all the mixture is used place the filled plastic eggs on a tray or in a bowl, and freeze for 15-20 minutes. Don't try to freeze them in the egg carton, it insulates them and the don't set. (Ask me how I know this)

Test one egg. I opened them with a blunt butter knife. I edged the long part of the blade into the gap between the halves and then wriggled it about until they parted. If your halves refuse to stay together use some extra chocolate to join them.

Then decorate as you please. These should be kept in a sealed container in the refrigerator. As you can see, I am not very good at tizzy-ing up things!!!

Plums are plentiful, so I have been cooking plums madly. I made Sugar Plum Pastries: I made pate sucree (posh name for sweet shortcrust pastry) with almond meal, orange zest and flaked almonds. Then I made teeny tiny galettes with a frangipane between the puff pastry and the plum. I spooned a little sugar on top after fifteen minutes and the last five minutes caramelised it. Yum. I didn't eat either plummy dessert because of the orange, but MrsDrWho said the pastry was deliciously short (Yay!!) and the little galettes were tasty too.

And once again, actual knitting content: The Purls Before Swine socks are almost complete. The need their ends sewing in and a nice blocking. Instead of the 'pearls' on the instep of the foot, I made holes instead. I worried the 'pearls' would make indentations (Princess and the pea, you know) Three day pair of socks: I watched a lot of TV.

And I have begun a new pair, in fact one is already complete: The I Let Leaves socks. I knitted my ordinary 'fits me' sock pattern and then an Eyelet Lace Leaf pattern from the Vogue Lace book all the way from the cuffs to the toe.

And here's a photo for my mum. Here are the little pork chipolata sausages wrapped in puff pastry, a kind of Pigs in Blankets. I like them with tomato sauce and I bought some American mustard. I like to dip them into both!!

I went to MrsDrWho's school and spent 90 minutes with very well behaved groups from her class making Chocolate Crackle Easter Eggs. It was lovely, they were all good, but I am so tired. We are off to bed for more sleep any minute now. It was hot today, so that didn't help either. No knitting tonight!!

Friday Food: Tomato Sauce - the condiment

Tomato sauce is Australia's condiment of choice. Lately it has become difficult to buy locally made sauce with locally sourced ingredients. I had MrsDrWho's mum's tomatoes, I had a jar, I had the will - I decided to make tomato sauce (ketchup to some other people I believe)  It is so easy. My only difficulty was actually making the sauce stay in the jar. I knocked it over the first time and then it sealed so well I couldn't undo the jolly lid the next day in spite of running it under hot, hot water. I think I ended up with one cup of sauce, only a quarter of what I made, but now I have the Sauce Urge and I shall definitely be making more. It tasted like home made tomato sauce I have tasted at other people's houses.

I used Sally Wise's recipe and I like the spicy additions but you can totally miss them out to make a milder sauce. I love that there is no need to worry about the skin on the tomatoes, it just gets left behind in the sieve.

I used a jar for the sauce because that's what I had but a bottle would have been infinitely better. I sterilised the jar and lid by washing them in soapy water and then plunging them into boiling water for a few minutes. Then careful remove - I used a spatula I soaked with the jar- and microwave on high for about 4 minutes or until it is dry. Do Not microwave the lid!!! Fill the jar with the hot sauce while the jar is hot. My sauce was still bubbling in the jar.


Tomato Sauce   makes about 4 cups

  • 2 tspn of mustard powder
  • 1 tspn curry powder
  • dash of oil
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 green cooking apple, peeled, cored and chopped
  • 250g sugar, I used half brown and half white
  • 1 kg tomatoes, roughly chopped
  • 1 1/2 cups white or cider vinegar  (I used cider)
  • 1 tspn salt

I used a larger non-stick casserole type pan, it needs to hold at least 2-3 litres.

Quickly fry off the mustard and curry, then add the onion and garlic for a minute or two. Next the apple and the sugar.

Add the rest of the ingredients, bring to the boil and simmer for 1 1/4 hours. You need to stir relatively frequently, about every 10-15 minutes. I also found I needed to turn the temperature up to keep the sauce simmering fast enough.

The sauce reduces quite a lot, you can see the line on the inside of the pan. Now you either very carefully push the sauce through a sieve using a soft spatula or a round ladle, or whiz it with a processor or with a hand held blender stick. I prefer to push it through a sieve as it takes out any skin that has not softened. Remember to check the underside of the sieve where lots of sauce hides.

Rinse out the pan, pour the sieved sauce back in and simmer for a further 5-10 minutes or until the sauce has thickened slightly. It will thicken further when it is cool. Now is the time to  prepare your bottle. Sterilise and prepare to fill. A jug or a funnel will help fill a narrow neck bottle.


Label the sauce and then once opened keep it in the fridge. I made some delicious pork and apple sausage rolls and they were perfect with my home made tomato sauce. It doesn't have the same consistency as commercial sauce, but it certainly tastes great.

From the record temperatures of the month or so ago, to tornado strength wind and flood warnings: never a dull weather moment here. I'm hoping that the wind doesn't do any damage. It's expected to pass through soon. This morning it was barely drizzling at our house, but at the dam it was dark and the rain was teeming down. The puddles were huge. Gilly thought they were fabulous.

I didn't take my raincoat and so after a few minutes I was soaked and then there was no point in worrying. Peri and Gilly has the best walk for ages and even met Rafa, whose Dad is as mad as we are and walked in the rain too.

I was rather pleased I washed all Peri's rugs and blankets earlier this week. Now she can be ensconced in sweet smelling glory outside the back door. She actually likes one blanket to protrude out, so she can survey her domain and part of the next door neighbours' domains as well. Peri is very loyal and tonight when I came home she had been waiting in the rain and the wind for me at the gate. Miss Lorelai Gilmore was inside all snuggly warm and asleep. She's still a baby.

And I've settled on a lay out for my Craftsy BOM 2012 quilt. It is edging closer to being almost finished.

And now, when you least expect it, actual knitting content. Marvellous green multi Waikiwi wool and bits and bobs from the Little Purls of Wisdom Knitty pattern. I call them Purls Before Swine socks. Ann inspired me to finally buy some of the lovely Waikiwi wool. I'm glad I did, it is lovely and soft and beautiful to knit with. I only started yesterday afternoon and knitted all the way to the heel turn. I'm half way through the gusset decreases because I had less knitting time today.

I'm just sneaking this post in before we all go to bed, trying to stay up so I'll sleep soundly and not hear the wind. Peri and Gilly always sleep soundly: the sleep of the innocent!!!

Cool To Be Kind, Means That I Love You Baby, You've Gotta Be Cool To Be Kind.

I have finally sewed and quilted all of the blocks from last year's Craftsy quilt. This is the last one, the Circle of Geese block. It is paper piecing, where you sew the material onto paper. It's complicated and took about two hours including all the cutting, sewing and pressing. I do love it.

and every time I walk past I run my fingers over the quilting. I love the feel of the close stitches making the cotton batting soft and cushiony. I did actually slightly censor myself, lest I become the Nigella of Quilting!!

My next step will be to trim the batting and backing to 1/2 an inch all round and then decide on the arrangement of the blocks. I shall try to do that on Thursday at Sewing.

We are all so happy because it has been cool. Cool in the day, 23*C, and cool in the night, 7*C. We are all sleeping soundly and catching up on extra sleep during the day. I am happy, Peri and Gilly are happy and they are playful too.

Gilly has been amusing herself with a chopped up carrot in a bottle. After she removed the lid she spent a good ten minutes adeptly manipulating the bottle with her paw and then shaking the carrot out. Peri just wanted the carrot without any of the effort. She magically appeared in almost every photo.

On Friday night people with nothing better to do roamed around the neighbourhood throwing flour on all the cars. My car escaped lightly, but it was extremely annoying and The Labradors wanted to lick it. At first I wasn't sure what the white powder was so I discouraged them. Buckets of cold water, then rain, cleaned most of it up. (I put the fireworks over the number plate!!)

My too big emerald green boots were sent back and a brand new smaller pair appeared on the front verandah this morning. All the postage was free, excellent service from I Love Billy. They were very helpful when I was too hot to be able to think clearly.

Now it is cool I have cooked, sewn, swept up leaves, washed woolllen underblankets and all of Peri and Gilly's blankets. I've even cleaned up the DVR hard drive and read more books. Tomorrow is the day for making tomato sauce. I decided not to use the recipe requiring 25lbs of tomatoes, I'll just make a 1 kg batch and see how I go from there!!

Friday Food: Apple Pecan Banana Bread

Good Taste Magazine March 2013 has four variations on a basic banana bread: Bonza Banana, Choc Chunk Banana, Raspberry and Coconut and finally the one MrsDrWho chose: Apple and Pecan.

It's a loaf made with oil and so it's all just mixed into one bowl. You need green cooking apples and here it's always Granny Smiths. I toasted my pecans while the oven was heating up, they only needed a few minutes and you need to watch them in case they go too far.

I can smell the banana bread cooking as I type this and it smells absolutely wonderful.

The top is brushed with honey, but as MrsDrWho doesn't like honey I missed that step completely. You could use some apricot jam, golden or maple syrup instead. You will need a 20 x 10 x 7cm** loaf tin.


Apple Pecan Banana Bread   makes 1 loaf

  • 20g butter
  • 2 Granny Smith apples, peeled, cored and roughly chopped
  • 1 1/2 cups halved pecans
  • 340g (2 1/4 cups ) plain flour
  • 2 tspn ground cinnamon
  • 2 tspn baking powder
  • 1/4 tspn bicarbonate of soda
  • pinch of salt
  • 155g (3/4 cup) light brown sugar
  • 250ml (1cup) light olive oil
  • 3 eggs, lightly whisked
  • 1 tspn vanilla extract
  • 2 1/2 cups mashed banana
  • 40ml (2 tbspn) honey


Preheat oven to 180*C. (ETA 160*C fan-forced) Reserve 1/2 cup of the nicest pecan halves and then roughly chop the rest and toast in the heating oven for a few minutes. Be sure to keep an eye on them. Set aside to cool.

Prepare the apples.

Melt the butter in a pan and then measure out the sugar and put two tbspn (that's 8 tspn) into the pan with the butter and add the chopped apple. Once the butter and sugar melt and bubble, cook for 5 minutes or until the apple is tender and set aside to cool a little.

Sift the flour, baking powder, bicarb soda, cinnamon and salt into a mixing bowl and then stir in the rest of the brown sugar. Make a well in the centre and add the oil, eggs and vanilla and stir gently until just combined.


Dry and wet ingredients
Spoon in the banana, apples and pecans and fold in till just combined. This is made in the same way as muffins with oil: the less stirring the better.

Grease and line a loaf tin.

Scoop the mixture in and smooth the top. Arrange the 1/2 cup pecans on top and then bake for 1 1/4 hours.

I always turn the tin around half way through even though the oven is fan-forced. Half way through I turned the temperature down to 160*C and it was cooked after 1 hour and 5 minutes. The oven was too hot, because the banana bread has risen too sharply and cracked. I've made a note of this at the beginning of the recipe method.

Cool in the tin for 20 minutes and then turn out onto a rack to cool completely. In a warmer climate you need to keep the banana bread in the fridge and it really only lasts for 3 or 4 days either way.

All That's Left Of The Dreams I Hold, Is A Band Of Cold.

Yes, a cold front swept through and we are currently luxuriating in a second day of 26*C. Last night it was 8. 8*C!! Peri and Gilly are happy and I am feel so much better. I did some jobs today. I needed the first day to somewhat recover and today I sent the too big boots back to be exchanged for a smaller size, bought Vliesofix and made March's Craftsy BOM and even sewed and posted off a gift. I added some of the books I've been reading to my Typelist and read two more books. I cooked pasta sauce and had a proper hot meal along with the usual salad.

Here's the block. It's not the Craftsy Block. That would have involved drafting my own block and sizing it up from 9 1/2 to 12 1/2 inches. I don't think this year's BOM is really for beginners. Instead we chose a block from a Moda sewalong by Zen Chic. I have made a green one today and I'll partially assemble the aqua one so our Sewing group can see the steps involved.

In other good news I found my lost blocks. They were inside the unbound Spot On Kaffe Fasset JellyRoll quilt. On Monday I unfurled it and there they were. It is amazing how an invitation to afternoon tea with The Dutches can elicit this:

It's a wombat soft toy, each side is different, from Saffron Craig. I lined it with cotton batting and then some wadding. It will need to be washed, but baby Zoe will only feel the soft natural materials. She is so happy and so cheeky. She is starting to eat real food and almost say some words and crawl about. She's just lovely and gorgeous.

The Federal Government is mooting higher entry scores, Emotional Quotient tests and Literacy and Numeracy tests for Teachers in training. The tests will be in Year 3. By then they have been on Prac. every year, surely they need to be tested and show excellence before they begin?? Way back when I trained, to win a Studentship you needed the highest Matric results, you needed to front a panel and be interviewed and convince them of your passion to teach, and in First Year we all took Literacy and Numeracy and needed to show we were more than just able. In our whole State there were only fifteen Primary studentships awarded and I am very proud that I was chosen. I am sure the teachers who must facilitate learning should themselves have a very high standard of education and be creative and diverse thinkers.

Google Reader is being closed down. Why?? There must be quite a lot of people like me who are not all tablet and smart phone-y and like the organisation and convenience of an RSS aggregator. Bah Humbug. I will wait while other more techy people come up with some solutions.

We solved the sprinkler problem. I placed the sprinkler on an upturned bucket and then the initial spray wasn't in anyone's eyes or ears. It was like rain and Peri and Gilly spent many happy times in the  sprinkler rain, being cool.

Peri had some enforced time under the hose when she rolled in something smelly and grubby. She was inordinately happy to be smelly and grubby and didn't mind smelling of colloidal oatmeal when she was clean!!

I'm turning on the oven and cooking an apple pecan banana cake tomorrow for Friday Food and I'm also having a go at making my own tomato sauce. Not sure how that will go, but I have lots of tomatoes from people's gardens and I love home made tomato sauce.I always choose it over commercial sauce when there's the option. Maybe I'll make some relish too. Yum.

And soon, very soon, I hope to be knitting myself Slow Line and Alight. As soon as I finish Petrea: I just need to sew it up and knit the button bands. Come on the cooler weather.

Friday Food: Tzatziki

Another recipe that requires no cooking. The continuing saga of our record temperatures is impinging on my cooking. There are myriad recipes for tzatziki, so this is just my usual approach.

It's a short recipe, but you can pick and choose what you'd like to add or subtract:

  • You may like to strain some of the liquid from the yoghurt or grated cucumber through a lined sieve
  • add 1/2 or 1 clove of garlic. Raw garlic is quite strong
  • The cucumber can be grated finely, or chopped
  • Lemon juice adds a nice tartness
  • A little honey will sweeten the final product

I am always whining and moaning about the use of preservatives like 282 in flatbreads (not mountain bread but that's a bit to papery and crumbly for my tastes) and so I was motivated to make my own. Again. Why I ever fogot I could I don't know. Jan says I can freeze them as they are, or cooked and always have some on hand. Mine were supple enough to wrap around a filling.


Tzatziki   makes about 1 cup

  • 200g Greek yoghurt (drained or not)
  • mint, finely chopped: a tablespoon
  • 1/2 - 1 clove of garlic, finely chopped
  • 1 medium Labanese cucumber, peeled and seeded
  • salt and pepper to taste
  • squeeze of lemon juice
  • a little honey to taste

Combine the finely chopped mint and garlic in a bowl. I seed the cucumber by running my thumb down the centre and just scooping out most of the seeds. I like to chop half the cucumber and finely grate the rest to give the tzatziki an interesting texture. I like the little chopped pieces.

You may be able to squeeze quite a lot of liquid from the cucumber, discard this before you add it to the mint and garlic. Season to taste and add a squeeze of lemon juice. Spoon in the yoghurt.

Mix well and then taste. I decided it could do with a little sweetness, so I added about 1/2 a teaspoon of honey. Mix again and then store in a covered container in the fridge for up to a week. It actually improves with time. It's best to leave it for at least an hour before you use it, after it is first made, to allow the flavours to meld.

I ate mine with some salad and lamb/ham. With my home made flatbread.

The Pear Dress is complete and I have worn it twice. It is a cotton with a kind of sateen finish, light and cool. When I went to cut it out I realised it had nap: all the pears fell the same way. Luckily I had plenty of material, though I always lay out the pattern as if I don't have enough. I am in two minds about the bodice armhole area in the front. I have a hollow outside my collar bones and I am not sure if I should undo the facing and sew the side/front bodice seam closer at the top, or just leave it. The pears are very crazily placed and they really obscure what is happening. I made another biased binding hem. I love it.

MrsReno and MrsSherlock sewed the second Craftsy BOM 2013. MrDrWho was not sewing last night. It was a nice easy block to make.

My blocks are still lost and likely to remain so for at least a week: 32 29 30 29 30 32 31* Celsius. I can't think when it is hot. The kind Librarian renewed the book I can't find. As soon as it is cool I will be able to resume normal programming, but not now. In an effort to cool the house slightly I hung a heavy corduroy curtain outside the front doors. So now the hall is bathed in a dark green light but that side of the house is cooler.

We go for our walk as early as possible, and so do other dogs. Classic Gilly and Jet, with classic effects. Gilly can run as fast as all the other dogs.

The State is being over run with rabbits. The hot dry weather means they are moving closer to suburbia. Peri has seen a few at the dam. She's not quite sure where they go when she chases them, but she's covering all the bases: Who's that up there?

Elbow length sleeves? To my eyes: bad. Much shorter sleeves? They look better to me. I think the longer sleeves pulled the dress out of whack, and they were also hotter. This is Dress #4. It doesn't have a name, but on reflection the flowers look crocheted, so it's the Doily Dress.

I love my new dress, it has a swirly hem. I swirl it a lot. I wore it to the opening of The Cancer Support Centre. They had chairs for all the important people, and the older lady volunteers and the sick people were standing up. I have to give top marks to Michael Ferguson  Geoff Lyons, Peter Gutwein and Ivan Dean, politicians who all gave up their seats. There are others too, like Nurse Cathy, I can see. Some younger hale men stayed sitting down and let the older people stand. It wasn't a case of men versus women, rather ill versus healthy. I couldn't have stood in the humid heat for half an hour. You might spot me in the photo!!! The Centre is wonderful and we are lucky to have access to such modern facilities.

Sadly there were no egg sandwiches for afternoon tea. A tad disappointing....

I sewed two skirts for MrsHouseOf's birthday. Sadly, my photos were more awful than usual. I sewed Views D and E without the ruffles.

I didn't quilt all of my blocks for the Craftsy BOM 2012 last month. I did sew two dresses, two skirts, an apron, a tote bag and a bagsket - in spite of all the hot days. This is quite a total and I am very pleased. We are having still more hot weather in Autumn: 29, 31, 31, 27, 27, 28 and 29 this week. I shall leave the quilting until it is much cooler and instead I shall sew a Pear Dress.

I bought Peri and Gilly a sprinkler to play under in the hot weather. I am not sure they know it is meant to be fun yet. Vundy and Tori loved their plastic sprinkler to death. Literally. Their enthusiastic engagement of sprinkler and excited teeth lead to its demise.

I am soon to be the proud owner of two pairs of short boots. One pair is a teal green and I have new jeans that match. The other pair is emerald green and I have new jeans to match. There will be a certain lay-by wait. MrsDrWho and TinkingBell convinced me that the slim leg jeans don't look too awful on me. Thank you ladies!! I had a lovely day with Tinkingbell, we brunched and lunched and chatted non-stop!!!

Last week I went off to one of the shiny new hospital buildings to be part of the Patient Partner scheme. I spent the afternoon with the doctors-in-training on their Haematology unit of work. Only three people felt my spleen, as last time everyone did and I couldn't lie on my left side for a week. It is a good feeling contributing to their experience of unusual and interesting diseases.

MrsReno (formerly known as Jubbly's mum) has a new dog, a friend for Jubbly. His name is Curly, and you can guess why. Jubbly had his coat clipped for the Summer and Curly is off to be clipped this week. He came from the RSPCA and is a very nice dog. Already Jubbly and Curly are constant companions and friends.

I am extremely tired after MrsHouseOf's birthday outing and I had appointments today. Tomorrow there will only be sleeping, dog walking, and Amy Johnson.
